Night last night of family stopping in to see dad with some fajitas. MEGA SHOUT OUT to Carniceria El Ray in Corona California. 415 E. 6th Street. Some top tier steak and chicken pre-marinated. Hispanic owned business been there since 1973. Same owner and his wife. If you’re in Corona or nearby, stop in. You will not be disappointed!
Got into a bit of trouble with the care giver, Richelle. She has been an absolute angel through this. She comes in and gives dad a massage and stretches along with a few small exercises. She has been instrumental in getting dad on a better path.
Well, she told me and my uncle ”DO NOT GIVE DAD RED MEAT!” Why? Because it increases his blood pressure. She told me more than once. Well, we did BBQ the night before last which was with short ribs (From Carniceria). I will tell you, dad was SO EXCITED about BBQ. He loves BBQ. He went on for hours before we started it about ”where’s the BBQ?”
We gave him some red meat. Not a lot, just a little. It was spicy and full of flavor and dad LOVED IT!
Richelle showed up next day. Guess what? Dad’s blood pressure was WAAAAYYY UP and his feet were a swollen. She asked about red meat. My eldest tried to cover up and evade the answer but Richelle, SHE KNEW. Shot me a bit of stink eye. I assured her that chicken fajitas for dad were a certain thing.
Ooops.
Don’t know how much longer dad has with us. This could very well end up being his last Christmas. None the less, he will cross over to Valhalla, knowing he is loved.
